The China study was the national bestseller book. It was written by Colin Campbell Ph.D. and Thomas Campbell. I chose this e-book for the reason I had A career in the healthcare field. I had many challenges due to keeping myself healthy. So a few years ago I remember reading the China Study. Know I have the opportunity to read again and do Biography. The obesity rate now in America is sky high. It’s becoming an epidemic. If we don’t do anything about this we will start in the new generation of the same problem and healthcare. By changing your lifestyle substantially improve your overall health. Besides obesity diabetes heart disease is still the number one killer. So what do we do about it but obviously cannot be swept under the rug? Michael Pollan, an American author, journalist, activist, and professor of journalism at the UC Berkeley Graduate School of Journalism (Michael Pollan), writes in his book In Defense of Food, the dangers of nutritionism and how to escape the Western diet and subsequently most of the chronic diseases the diet imparts. In the chapter “Nutritionism Defined” Pollan defines the term nutritionism. Pollan’s main assertion being how the ideology of nutritionism defines food as the sum of its nutrients, and from this viewpoint Pollan goes on to write how nutritionism divides food into two categories, with each macronutrient divided against each other as either bad or good nutrients, in a bid for focus of our food fears and enthusiasms. Finally, Pollan concludes that with the relentless focus nutritionism places on nutrients and their interplay distinctions between foods become irrelevant and abandoned.
Most of everyone loves deep-fried foods, especially French fries and fried chicken; one can find them in almost every fast-food restaurant for a cheap price. Early in 2002, the Swedish National Food Administration found that certain foods form a compound called acrylamide when fried or baked; this compound is toxic and found to cause cancer in lab rats. This discovery became a concern as to the possibility that humans will also develop cancer from eating large amounts of fried foods.
Food science has led to find cures for diseases such as scurvy. Scurvy is a disease caused by a deficiency of vitamin C, characterized by swollen bleeding gums and the opening of previously healed wounds, which particularly affected poorly nourished sailors until the end of the 18th century. This disease was very common among sailors because in the 18th century they didn’t have refrigerators, so their diets lacked perishable foods while sailing the sea. Today, if you come across this problem you can just eat a vitamin C tablet. This is just one of the many examples food science has promoted a balanced diet by the study of nutrients in our food.
Obesity is a huge problem that needs to be resolved because it affects all people, unlike most issues. People of every gender, every age, and every race are at risk of being obese. Obesity rates in America have nearly doubled within the last twenty years. Something must be done not only to prevent obesity rates continuous rising, but also to dramatically increase the percentage of obese people in America altogether.
Certain substances have been avoided because of their potential harmful effects on the body. One way a substance has affected cells was by changing their genetic material. A substances’ potential to cause changes in genetic information was the mutagenicity of the substance. If it caused changes in the DNA sequence, it was considered a mutagen. The altering of a DNA sequence was a concern because the modification of DNA can lead to cancer. Mutagens may act as cancer causing agents, commonly known as carcinogens (Biology 214 Laboratory Handout, 2008). As a result, there was a large amount of research done focused on identifying mutagens. There was an emphasis on substances that people regularly come in contact with, often through eating. Certain substances found in a large portion for a typical human diet have been studied for mutagenicity. One of these substances was Pepsi-Cola, a common drink sold and consumed across the world.
Chickens are selectively bred and given feed with arsenic added to it to promote faster growth. A study conducted in 2006 found that 55% of uncooked chicken bought in a supermarket contained arsenic (Farm Sanctuary).
