Food -- it is a necessity. There is not one person who does not think about it on a daily basis. For a college student, the quality of food available is not always to the highest of standards. Many students can not afford to buy expensive food or eat out on a regular basis. Many times their only option left is to eat from their school’s dining halls.
The transition into college can be one of the most exciting times in a young adult’s life. They are starting a new chapter in their lives that may have a lasting effect on their future. Many new friendships will be made, along with countless amounts of changes in their life including new habitat, change in income, workload amounts, and eating habits.
Change in eating habits is one of the most significant changes a college student experiences. There are many different factors for this change such as being away from home and home-cooked meals, late night snacks, increase in alcoholic beverage consumption, along with the fact that many college students now have a meal plan to eat at their college dining halls.
At Northeastern University, the Dining Services Department works very hard to try to accommodate the many different needs of their students. Bill Fantasia (Director of Residential Dining), failed to respond to several attempts to set up an interview regarding the dining hall’s healthy aspects, however, research and trips to the dining hall provided information on the options offered.

About 43 percent of males surveyed eat 10-15 times a week at Northeastern’s dining halls; whereas only about 14 percent of females do. However, 50 percent of females surveyed eat 1-4 times a week, whereas only 7 percent of males eat 1-4 times a week.
There are many books out for college students, if they are interested in eating well while living at school. One such book is called the College Student’s Guide to Eating Well on Campus by Ann Selkowitz, M.S., R.D., L.D. This book describes the basics of nutrition, along with why the freshman 15 occurs and how to avoid it and other healthy eating techniques.
It depends on what specific situation the student is stuck in to determine which foods they 're living off. My assumption of their daily meals is first, breakfast is one piece of fruit and a breakfast sandwich from a fast-food joint. Then, lunch or dinner is one entree of pizza, fried chicken, or a burger. Occasionally the student may snack off a bag of chips or a candy bar, but other than that, I can’t say that most students are eating healthy; I’ve seen at my college snacking mostly on chips while taking a break from class. Luckily, there some solutions to help to change the eating habits of the students. I discovered in Victoria Li’s article “Easy Diets for College Students” some helpful tips for the struggling students. She suggests “While opting for burgers fresh off the grill seems tempting, adhere to the habit of filling half your plate with fruits and vegetables, then filling the remainder with whole grains and lean protein” (2). In other words, it’s okay to have a greasy burger, but just as long you have something healthy to go with it, leading to a good balance of protein and energy Li says. As for the students going hungry because of their tight budget, some colleges or nearby locations may have meal donors. Her work not only influenced the development of fundamental science, but also began a new era in medical research and treatment.
In conclusion the moral of this story is simple- colleges should take more responsibility and initiative when it comes to the food choices and the health of their students. The college needs to offer better food choices in their dining areas. The hours of operation should be between normal eating hours so the option to eat at an unusual or indecent hour is obsolete, and proportions should be strictly regulated and enforced. While most would argue that it is the students fault for gaining weight, I believe the facts presented are obvious in pointing you in the other direction. The school has all of the power and needs to address this issue accordingly before the epidemic becomes bigger than what we can handle.
The University of a Florida offers meal plans for students who wish to have a meal ready for them rather than worrying about what they are going to eat, or perhaps cook, throughout the day. The problem with this idea however, is that students oftentimes do not take full advantage of this system. Whether it is cooking, eating out, or even going home on the weekends, there are several factors that can get in the way of taking full advantage of the meal plan. This dilemma often leaves families asking the same question: is buying the meal plan that is provided by colleges actually worth the money? While buying a meal plan for college appears to make sense for many incoming freshmen, it does not always translate into the most efficient use of their money.
With an unlimited meal plan and buffet-style meals, do we students know how big our portions should be? If we are accustomed to being served super-sized portions, we might not realize when we are serving ourselves over-sized portions in our dining halls. In fact, researchers have found that increased portion size is an even greater problem in cafeteria settings like ours, noting a positive association between larger food receptacles and increased consumption(2). Marie Curie opened the world up to the science of radioactivity. She discovered polonium and radium, two radioactive elements, and was the first person to ever win two Nobel prizes and in two different subject areas. To the modern world, her discovery of radium was significantly and forever changed our understanding of how matter (atoms) and energy (radiation) are related. Her efforts influenced and expanded theories dealing with fundamental science and brought in a new era of medical research and treatment.
During the 1990-1991 school year, dietary records of 1,912 college students were examined to identify the amount of meals students skipped and which types of food students were actually eating. The study found that 22% of the students skipped their breakfast, however students were recorded to snack at least once a day. Furthermore, the study also found men consumed foods with higher calories and higher amount of fat. The study appears to be more quantitative, however qualitative practices must have taken place when interviewing subjects about their meals to input into the dietary records. The findings propose that college students should be eating more vegetables and fruits, along with consuming less carbonated beverages and dishes with a high amount of fat. Although, this is a well done study, it is limited because it was done over 20 years ago, so eating habits of college students might have changed within this time. For instance, within these 20 years, the perception of soda has changed drastically, which illustrates the need for this type of study to be more relevant to college students today. Obesity has risen over the years. The United States now has one of the highest obesity rates. Bad eating habits are usually the cause of this pandemic. For the past few decades, college dorm foods have led to these habits. The more unhealthy food choices are, the harder it is for people to resist these foods. Colleges serve a variety of unhealthy food in their dining halls that contributes to students’ lower GPA. By eating healthier, students can maintain a healthy weight, focus better in school, and increase their school performance to a higher grade point average (GPA).

One of the problems that cause weight gain is the lack of parental supervision over what the student consumes. In college, a student can easily stock themselves in fatty snacks such as Twinkies, cookies, chocolate, and chips. Also, the all-you-can-eat buffet seems to most likely run out of the pizza, french fries, and ice cream before the salad. A students schedule sometimes plays a factor in the consuming of too many snacks. If a student is in a hurry, he or she will grab a pop tart and be out of the door with a 200 calorie breakfast. A student should keep away from the high-fat snacks and concentrate on salubrious foods. At the cafeteria, a student should try to eat salads and attempt to eat new kinds of foods since the buffet has so much to offer. ...omething to go. I found out that college student’s want foods that are quick, taste good, and cheap. The limitation to my research was that I only passed out ten surveys all at the cafeteria. Perhaps if I did more or passed them out at a different location I might have gotten different results. I also only interviewed two people, and a larger sample might have changed my results. Also only observing my roommates shopping might have limited me to what I always eat, other college students might buy healthier foods when they shop. Take a minute now and think about what you eat in an average day and see if you fall into the categories of eating unhealthy with the majority of college students. Next time you buy something to eat take a second and look what’s in it and think to yourself. Should I be eating this? Or is there something healthier that I could be eating?
The authors performed this study to identify specific program factors associated with healthful changes in students’ dietary habits. The importance of the study is that long-term implications to one’s health can be caused by the challenges to healthy eating when transitioning into college (Kelly, Mazzeo, & Bean, 2013, p. 304). The study, originally with 936 articles, was then narrowed down and involved 14 students’ research articles that met certain criteria set up by the authors. “Criteria for inclusion in this review were studies that evaluated the efficacy of intervention, program, or educational course intending to improve the dietary or nutrition habits of college/university graduate students,” (p. 305).

When one goes away to college, their life changes dramatically. They are forced to make changes in their own lives in order to adapt to college life. When one is in high school and living at home, their eating habits and personal hygiene practices are for the most part controlled by their parents. They are told what to eat and when to eat it. They are told to keep their room clean and to take their vitamins, etc. When one moves away to college, they are on their own. There is no one telling them to clean their room, or to do laundry or what they have to eat. In some colleges and universities, it is required that freshmen live on campus and eat at least two meals a day in the dining hall. This isn't necessarily for the university to monitor a student's eating habits but rather to get the student acquainted with the campus and other people living there. Food served in college dining halls has not been known for it's nutritional value. However, over the past couple of years college chefs have been working to change that. While a lot of students have committed to eating the healthier foods and trying to stay healthy, the vast majority lives on pizza and taco bell or any other cheap fast food chain that is open until the late hours of the night. College is a fast paced environment and fast food caters to college students. In this fast paced environment, students more often than not neglect their health and personal hygiene and the consequences range from obesity to deadly eating disorders.
