Human bodies are naturally created to break down simple foods. As a growing population we have had to create technology that keeps up with the demand for food. In generating this technology we have created food that our bodies are not fully capable of breaking down without having some sort of negative health effect. The food industry uses thousands of chemicals and additives to preserve our food and our bodies are fighting back.
Nitrates and nitrites are used in preserving meats and can cause numerous health problems that most of us are not aware of. Methemoglobinemia is a blood disorder where oxygen carrying molecules (hemoglobin) builds up and does not get the appropriate oxygen throughout your body. Methemoglobinemia can cause comas, convulsions, and cyanosis (a blue or purple discoloring of the skin due to lack of oxygen) According to the Agencey for Toxic Substances & Disease Registry not only are you at risk for Methemoglobinemia, but you are eating your way to potential cancer. “Elevated risk of non-Hodgkin's lymphoma and cancers of the esophagus, nasopharynx, bladder, and prostate have been reported” ("Case Studies in Environmental Medicine (CSEM) Nitrate/Nitrite ToxicityWhat Are the Physiological Effects of Exposure to Nitrates/Nitrites?") Nitrates are also known to cause headaches, neasuea, vomiting, and asthma. The book Salt, Sugar, and Fat: How the Food Giants Hooked Us discusses the danger of food with its readers. The dangers of food discussed in the book are the ingredients of Salt, Sugar and Fat in the food individuals consume on a daily basis. Producers use these ingredients to their advantage to get the consumers bliss point. The bliss point attained is used by the food giants to achieve a profit. However due to research on the health risks of these ingredients food companies are strategizing in order to maintain their profit and earn more of a profit.
Nutrition is a process that involves the breakdown of food and other substances in the mouth useful in the delivery of body energy. Practicing healthy diet can lead to avoidance of both the known and the unknown health issues. Poor diet is harmful to an individual’s health and cause diseases like kwashiorkor, scurvy, obesity and metabolic syndromes. Popkin (2011) said that “In the last 20–30 years, the world has reduced its water intake, shifted towards sugar-sweetened beverages, increased its proportion of food that is sweetened and ultra processed and reduced its intake of many health components of our diet, including legumes, fruits and vegetables" (p. 83). Different types of foods contain various nutrients that range from fats, carbohydrates, proteins, vitamins and water. Insufficient, imbalanced, or excessive consumption of nutrients by an organism leads to malnutrition. Today, the trend of diet and nutrition is changing at an shocking rate. Good choices of foods positively affect an individual’s health while poor diets have long-term negative effects. Healthy diet gives the body sufficient nutrients to perform physically, fight diseases and maintain wellness. Most of the foods, especially in the market today have heavy saturated fats, lot of carbohydrates, partially hydrogenated oils and highly processed foods.
Many argue the importance of food and its nutritional value. Food Science has been a heavily debated topic for years. Today, this topic sparks even more controversy. In Michael Pollan’s book In Defense of Food: An Eater’s Manifesto, Pollan shares several aspects of insight on different topics about health and how it should be approached. Pollan breaks down his overall beliefs and explanations from food nutrients to health risk factors. This book has allowed many readers and scientists to approach eating and health from different perspectives.
