Subway is an American fast food restaurant franchise founded by Fred DeLuca and Peter Buck in 1965. Throughout the years, the company has gained substantial amount of growth in franchises and has become one of the largest single-brand restaurant chain in the world. Subway continues to display fierce commitment to provide a wide range of taste, healthier food choices while considering environmental footprint and creating a positive influence in the communities they serve. Flexibility seems to be the most heavily concentrated component for Subway restaurant which is followed by quality. Speed, cost and dependability are equally the same. The data was collected from primary research by asking Mr. Stuart House to distribute 20 points across the performance objectives. This information was used to construct a polar diagram of Subway as seen above (Appendix 3).
2.6 Subway’s main performance objectives

The main performance objective of Subway that it focuses on is flexibility, meaning that being able to change the operation so that it can provide four types of requirement (Slack et al, 2007). They are Service/product flexibility; allow the ability to be have new or modify the products or services, Mix flexibility; give variable options and selections of products and services, Volume flexibility; adjust the level of output in order to produce different volumes over time and Delivery flexibility; the ability to change the time of delivery of products and services. It combines the benefit of both strategies. The strategy requires the basic components for the product are already manufactured however, the only process left is assembling.
