Two-thirds of the world’s population consumes tea.1 The three major types of tea are black, oolong, and green. These types of tea differ in how they are produced and if they are fermented. Black tea is produced by oxidizing the leaves. This method intensifies the flavor and turns the leaves a dark brown color. Oolong tea is made by partially exposing the leaves to air. It is considered to be an intermediate between black and green tea in terms of flavor and caffeine levels. Green tea is the only type that is non-fermented. It is produced using young tea leaves and sold for consumption after withering.2

They were asked to refrain from any use of green tea products amongst various other things 24 hours before each study day. The study days were once a week for a month. The participants did not consume pure green tea extract, instead they were given a soft drink, Rivella, that contained 0.05% green tea extract. Since the green tea extract was in a soft drink, there were other ingredients present, such as milk whey, lactic acid, calcium cyclamate, acesulfame K, sodium, potassium, magnesium, calcium, and chloride. As a control condition, other participants were given the same soft drink without the green tea extract. The participants swallowed a feeding tube for application of the test solutions so they would not be able to taste the differences between the two drinks. The researchers reported that green tea extract increased the connectivity from the right superior parietal lobule to the middle frontal gyrus. Due to this increased connectivity, there was an increased positive effect on task performance which suggests a positive effect of green tea consumption on cognitive functioning.
